Our 100% Pinot Noir originates in our vineyards located in the South of France on the foothills of the cooler Pyrenees and Cevennes mountains. The soils are made of limestone, perfect for the delicate Pinot Noir. The vinification starts with 2 days of prefermentation cold maceration to best extract the fresh fruit characteristics of the Pinot Noir. It is followed by a two-week maceration. We will then age it about 6 months with French oak and bottling will be done early in order to capture the grapes’ primary flavors.
A smooth wine with hints of raspberry and cherry on the nose, mixed with floral notes and spice aromas. The palate is rich and silky with an array of berry flavors.

Appetizers: Charcuterie, ham and other cold meats. Patés and terrines.
Entrees: it will go very well with Roast chicken or lamb, Chicken or turkey sausages but with salmon or tuna as well. Desserts: light cheeses.
